Get the most zest from lemons with this tried-and-true technique. First, use a microplane zester. Then, rather than doing small straight back and forth movements in one spot, hold the handle of the microplane in your palm, place your pointer finger along the outside edge of the zester and brace the bottom of the lemon with your thumb.
